I use a big head of fresh cauliflower and created this tantalizing delicious soothing soup.

Makes 8 (1-cup) servings

  • 2 tablespoons olive oil 2
  • 1 onion, finely chopped
  • 1 large cauliflower, broken into florets (about 8 cups)
  • 1 1/2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1 tablespoon minced garlic
  • 1 large potato, peeled and diced (about 1 1/2 cups)
  • 3 cups fat-free vegetable broth
  • 1 cup milk
  1. In a large pot coated with nonstick cooking spray, sauté onion over medium heat until tender. Add cauliflower, turmeric, cumin and garlic; stir about 5 minutes.
  2. Add potato and vegetable broth. Bring to boil, reduce heat and simmer about 15 minutes or until cauliflower is tender.
  3. In a blender, food processor or hand-held blender, puree until smooth. Add milk and heat.

Terrific Tip:  A hand-held blender is a useful kitchen tool to cream soups and smoothies with easy clean up.
