The Anti-Everything Curried Hummus
Chick peas have a very low glycemic index, which means they create steady blood sugar and are especially healthful for diabetics. They’re also a great source of fiber making them anit-cholesterol. Curry powder contains curcumin, a powerful antioxidant believed to be anti-inflammatory and anti-cancer in addition to providing brain support.
Makes 2 c.
2 15.5 oz. cans chick peas (garbanzo beans), rinsed and drained
2 T. olive oil
3 garlic cloves, crushed
1 T. plus 1 tsp. curry powder
6 T. fresh lemon juice
1/2 c. water
Salt, to taste
Hot sauce, to taste
Put all ingredients in a food processor and blend until smooth. Serve (drizzled with olive oil, if desired) with pita chips.
