Recipe: Gluten-Free Coco-Nutty Oatmeal Cookies

These wholesome gluten-free oatmeal cookies are rich in healthy fats from the coconut oil and almonds they contain. The oats provide heart healthy soluble fiber, as well as nutrients like manganese, selenium and thiamine.
Makes 3-4 dozen cookies.
Ingredients:
1 c. virgin coconut oil
1 c. brown sugar
1 c. tupelo honey (or other light flavored honey)
2 eggs, well beaten
1 T. vanilla extract
1 1/2 c. brown rice flour
1 tsp. salt
1 tsp. baking soda
1 T cinnamon
3 cups gluten-free whole oats
½ cup crushed almonds
½ cup raisins (optional)
Directions:
- Combine the coconut oil, sugar and honey in a large bowl and mix until blended.
- Add eggs and vanilla. Beat well.
- Sift together the brown rice flour, salt, baking soda and cinnamon. Add to the wet mixture and mix well.
- Stir in the raisins (if using) and nuts. Stir in the oats last.
- Spoon out by rounded tablespoonfuls on to greased cookie sheets. Bake at 350°F for 10 minutes.
- Remove from the oven, place cookies on a wire rack and allow to cool completely.
