Heart Smart Roasted Red Beets with Walnut Vinaigrette
Beets are a vegetable you rarely see on menus these days. But they have plenty of health boosting benefits. Roasting beets retains blood-pressure-lowering nutrients. The walnut dressing adds antioxidant vitamin E.
Makes four 1/2-c. servings.
6 fresh red beets
¼ c. walnuts
2 T. olive oil
2 T. balsamic vinegar
• Preheat oven to 350 degrees.
• Trim stems off beets, rinse, and wrap each beet in aluminum foil.
• Place on a baking sheet and bake until soft, about 45 minutes.
• Remove foil and peel skin off the beets. Cut into bite-size pieces and put in a bowl.
In a blender or food processor, mix together oil, vinegar and walnuts. Pour over beets and serve warm or at room temperature.
