Recipe: Antioxidant-Rich Green Bean Salad with Feta
This super-green salad has lots of antioxidants, including lutein, beta-carotene and vitamin C, and it’s a delicious way to help you rack up the seven to nine daily servings of fruits and vegetables recommended for adults.
Serves 4.
4 c. mixed baby salad greens
1/2 lb. fresh green beans, trimmed, cooked al dente and cut in half (1 1/2 to 2 cups)
2 oz. feta cheese, crumbled
2 T. extra-virgin olive oil
1 T. balsamic vinegar
1 T. orange juice
1/2 tsp. fennel seeds
Salt and pepper, to taste
Optional: 1/3 c. dried cranberries
- In a medium-size bowl, combine greens, beans and cheese.
- Add oil, vinegar, juice, fennel seeds, salt and pepper; toss. Sprinkle with dried cranberries, if desired.
Nutritional Information per Serving: 127 calories, 7 g carbohydrates, 10 g fat (3 g saturated), 4 g protein, 13 mg cholesterol, 3 g fiber, 167 mg sodium.
