Anti-Aging Blueberry Buckle
Blueberries are one of the highest antioxidant foods, and can protect your brain and eyes, and reduce your risk for cancer. My friend, Laurie J. Buck, came up with this recipe after we spent a morning picking berries. Lemon zest and lavender add bits of color and flavor to the biscuit part of this dish, while lemon juice enhances the blueberry taste.
Serves 6.
2 T. butter
¼ c. each whole wheat flour and white flour
½ c. cornmeal
½ c. sugar
1 ¼ tsp. baking powder
¾ c. 2 % milk
¼ tsp. salt
2 c. blueberries
1 tsp. lemon zest
1 tsp. lemon juice
½ tsp. lavender buds (optional)
• Preheat oven to 350 degrees.
• Melt the butter and use to grease a 9” square baking pan, or 6 mini-pans.
• In a bowl, mix together the flour, cornmeal, sugar, baking powder, lemon zest, lavender buds, salt, lemon juice and milk. Pour into the baking pan.
• Spoon the berries over the batter.
• Bake at 350 for 35-40 minutes or until the batter is set and top is browned.
• Serve warm with ice cream, yogurt or milk.
